Scrap Cooking!!

It’s been said so often that the simplest dishes are the tastiest and I completely agree. Nothing is more satisfying than using leftovers and simple ingredients to create something flavourful, and my favourite chef did just that the other night. It’s so tasty that I’ve decided to share.

We’ve discovered this ‘clean’ little butcher at the corner of Pali naka called Josef’s which sells something known as scrap. At first I couldn’t understand why they call it that but it really is just that- scrap! It’s a mix of leftover meats, mostly cold cuts like ham, sausage, bacon, salami etc. you don’t really need the ‘scrap’ you could even just buy your choice of coldcuts and make the same thing. It’s basically a mix of cold cuts and you can use it in anything for e.g. pasta or a bake dish but my favourite chef cooks it slightly different.

For a dish serving 3 people, you will need –

Ingredients –

3 packs of scrap
2 medium sized onions chopped
3-4 medium sized tomatoes chopped
A cup full of chopped coriander
5- 6 cloves of garlic (slivers)
1 teaspoon chilli powder,
2 medium sized potatoes boiled and cut into small pieces.
Teaspoon of haldi
Oil
Salt and pepper
Method –
The meat (scrap) has already been cleaned but we still prefer to give it a rinse and wash it again. It is already cut into small pieces however we like to further chop them up into small bite size pieces. You could leave them at the size they are or you could chop them up to a small size that’s entirely up to you.

Then chop up the onions and tomatoes and cut the garlic cloves into slivers.

Peel the potatoes and cut them into small pieces. The size of the pieces should be the same as the size of the meat pieces. Add the potatoes to water and put it to boil. Leave it for a minute after it starts boiling. Switch off and cover it and let it stand for about 10 – 15 mins so the steam helps to cook it further.
Heat the oil in a pan and add the onions and tomato. Cook for about a minute till it completely dissolves (the onion doesn’t so much but the tomato will ).To this add the slivers of garlic, haldi and chilli powder and cook for 2 – 3 minutes.


Add the potatoes and scrap and continue cooking for about 7 – 10 mins, add salt and pepper and the coriander towards the end just a minute or so before you stop cooking.

So there you go, simple easy and I could eat it for days. My favourite chef once again has made me very very happy 🙂
