I’ve started what I call my breakfast series on the blog recently and uptill now it only had a roundup of places I’ve visited for their breakfast spread. This is my first attempt at sharing a breakfast recipe. I’m trying my hardest to think of simple and innovative ideas for breakfast that are easy to make, don’t need much prep ( since I’m always in a daze in the morning ) and most importantly are slightly healthy. I’m trying my hardest to stay away from anything that has too much butter, sugar or any flour at all. It’s not easy but it’s not impossible either.
I’ve got a few recipes I’m going to try in the next couple of days or weeks, really depending on how much time I have but as I experiment I will share them. As promised, every recipe on Snapchat will be posted on my blog so you can get all the correct measurements and go through the recipe at leisure.
So for my first attempt at a breakfast recipe, I just used everything I had on hand and made my version of a simple yet delicious French Toast.
Old slices of bread ( any of your choice )
2 cups of milk
1 teaspoon cinnamon powder ( optional )
1 teaspoon vanilla extract ( or even a vanilla bean if you like )
1 teaspoon brown sugar ( optional )
A little butter or oil to grease the skillet or pan.
Mix all the ingredients together and whisk it into a smooth runny batter. It should be almost like a runny custard. You can skip the sugar which is really what I did, you can flavour the batter with finely chopped fruit like strawberry if you like or skip the cinnamon and add chocolate powder. It is really up to you but the base will always be milk and eggs, no replacement or substitute for that. I added a lot of cinnamon because I like it and that’s made my batter brown otherwise it would be a pale yellow colour.
Cut the slices of bread into half or if you like you can leave them whole. I’ve used brown bread I had at home but you can use white bread, brioche, ciabatta, really any bread that you prefer. If it is slightly old, say a day or so, it makes excellent French Toast, the fresh ones are avoidable. Soak the individual pieces of bread ( one or two at a time ) into the batter so it soaks up the mixture and coats it on both sides.
Heat the pan, rub a little oil or butter ( or both if you prefer so the butter doesn’t burn, I have only used butter and just a dash the skillet or tava gets hot enough ) to grease the pan slightly and place the soaked bread on the skillet or pan. If they are small sizes then you could do two at a time like I did.
Cook on one side till it turns a little golden brown and flip it over. Cook on each side for about 3 – 4 minutes but if you think it needs longer or lesser time depending how fast your pan heats up and how fast your toast cooks, adjust accordingly.
One cooked on both sides, repeat with the rest of the bread and serve hot. You can garnish with fresh fruit or sprinkle powdered sugar over them or like me serve them with a drizzle of honey or maple syrup. Choice is yours. Bon Apetite !
