If you grew up in the 80’s 90’s or even early 2000’s a popular party snack was prawn toast. Fried bits of toast with a delicious prawn mix on top, I remember eating these at old Chinese restaurants in Mumbai. Today you don’t find it on many menus except perhaps the old school joints. It’s been well adopted into the Chindian or Indo – Chinese repertoire and as far as retro dishes go, this one is right up there !

Ingredients
500 grams deveined clean prawns
1 packed sliced bread
½ cup of sesame seeds
4-5 garlic cloves chopped
Handful of chopped spring onion greens
2 teaspoons of fish sauce or light soy sauce
1 egg white
Pepper ( optional )
Oil for frying
Method
Slice the bread diagonally into triangles and cut off al the edges. Place aside.
Cut the prawns into small pieces and then add to a mixer or blender along with the egg white, garlic, spring onion greens and fish sauce and mix it into a paste. It can be kept a fine smooth paste or slightly chunky whichever you prefer. I’ve skipped adding salt additionally as there is enough salt from the fish sauce.
Add the prawn paste onto the individual triangles of bread and then sprinkle on top with sesame seeds. You can use a mix of black and white sesame seeds if you like.
In a wok add your oil and let it heat for a few minutes. Add the individual slices of bread with the prawn paste and sesame seeds one at a time into the oil with the side of prawn paste facing down. Cook on each side for 3 to 4 minutes and serve hot.
Prawn toast can be eaten on it’s own or with ketchup or a hot sauce of your choice. It’s a fun snack and a hot at parties.
How To Store Prawn Toast ?
It isn’t advisable to store the prawn toast honestly as it will get cold and loose it’s charm and bite. It’s best eaten hot freshly made. If you have extra you could pop them in the fridge and re heat in the oven before serving.
