Protein Pancake Recipe

I didn’t think I would ever be the type of person to obsess over protein powder but then again here we are. It was after a recent battery of blood tests that revealed a number of things that had needed me to lower my intake of animal protein and hence, I turned to plant based protein powders.

I find drinking it like a smoothie beyond boring and as someone who needs variety in every meal, I had to figure a way of including the powder without being bored. I use to make these pancakes with oats so I swiped them for the protein powder and I promise you they’re a wonderful breakfast option.

Ingredients

1 scoop of Protein Powder (can be any brand or flavour)

2 Eggs

2 Bananas (over ripe)

1 teaspoon vanilla essence

1 teaspoon cocoa powder (optional)

Butter and oil for cooking

Method

In a bowl add the bananas and mash them down with a fork or potato masher. Add the two eggs and whisk well together. Add the protein powder and mix it all well to incorporate together. I’ve used a protein powder that is chocolate flavoured. If you are using a powder that has no flavour you can additionally add some vanilla essence and cocoa powder but if your powder is flavoured you can skip these two.

Mix everything together so it forms a nice thick but runny pancake batter.

In a skillet heat some oil or butter I’ve used a combination of both and add a spoonful of the batter. You can make these as big or small as you like so accordingly add one or two spoonsful of batter. Let it cook for a couple of minutes.

Once you see small bubbles starting to form on the top and the bottom firming up a little, flip the pancake and cook it on the other side. Cook the pancake well on both sides for a couple of minutes and serve hot with fruit of your choice or even a drizzle of honey or maple syrup and enjoy.

How To Serve Protein Pancakes

You can serve these protein pancakes like you would any regular pancakes. You can drizzle it with either maple syrup or honey. You can dust icing sugar on top. You can serve it with fruit like I have. To maintain it’s healthy aspect I avoid sugar and honey but the choice is entirely upto you.

Can I store Protein Pancakes

These protein pancakes are best served hot straight off the pan. Once they cool they become tough and rubbery. You can store it in the fridge but even when you re heat them it remains tough. My recommendation is to not store them and instead eat them hot as soon as they’re cooked.
